Foodie Friday

This week we are making Jambalaya!
My New Orleans Blood is stirring
what with my SAINTS winning and headed to the Super Bowl!
Oh, how excited my Granddaddy would be.
He was a fan when it was paper bags and the 'aints! 
My GiGi must be over the moon as well.
ANYWAY! 
On to the Jambalaya
This is a semi-homemade, fool proof version!

Shopping List:
3 cans French Onion Soup
3 cans Beef consomme
1lb of Minute Rice
1 large onion
2 bunches of scallions
1 large bell pepper (chopped)
1/4 tsp garlic powder
several sprinkles of cayenne pepper
1 pkg smoked sausage
3-4 boiled/ shredded chicken breasts
(optional, sometimes I do sometimes I don't)
Combine soups, onion, scallions, bell pepper and seasoning and cook until veggies are tender. Cut sausage into chunks and add to mixture. If adding chicken do so at this time. Cover and simmer about 15- 20 minutes.  Then add rice stir cover and remove from heat. Let stand covered about 15 minutes. Stir before serving with french bread!

That sounds like a great meal! I love cajun food. And I love the Saints, too. I told someone the other day that Who 'Dat is about to become Guess WHO! I hope they win SO much!

Mmmmm...that looks and sounds good! I'm thinking of a NOLA menu for next Sunday. After all, we are pulling for the Saints.
