Now onto Foodie Friday!
This week we are making onion soup.
My Uncle JW's Onion soup!
He taught us this amazing trick a few years ago.
You are NEVER going to believe how simple and delicious this is! First you need an onion for each serving. I have found that the fresher the onion the better. Also Spanish onions tend to work best for this. they are juicier.
After you have peeled them you are going to quarter them and then again BE SURE TO NOT CUT THROUGH completely.
gently tuck a beef bouillon cube (the ones in the little foil wrappers) down inside the center of the onion. If your onion is on the large side, you will need to use two cubes. Place in the center of a piece of aluminum foil and fold it to create a little pocket.
Do this for each onion.
Then place all of your pockets into a casserole dish
Place in the oven at 350
for an hour
Then open your pockets and pour into a bowl
and you have this
If your onion was a little dry
you can add a little water and pop it back in the oven for about 15 minutes to warm.
Top with your choice of provolone cheese or mozzarella and a piece of french bread
ENJOY!

A boullion cube in the onion! This is brilliant. The flavor must be out of this world good!
One of my best friends taught me about the boullion cube, and it is a great taste. We use them on Vidallias, but I never would have thought to do this for onion soup. That's a master stroke! Thanks!
