Foodie Friday!

Our Hostess is the ever gracious Gollum

Much like my Table scape Thursday, this is a quick Foodie Friday. I am so busy this week, but I could not neglect my favorite posts of the week!

So something quick and easy is in order. I know Lemon Icebox pie has been around forever, but I discovered when people find out that I am making one, they crave a piece or want the recipe. I think people think of it as a dessert that their Southern Grandmothers used to make, and most think it is hard. Well, it isn't, and I am going to share with all of you just how easy it is!



Our Shopping List:



3 eggs separated



1 14oz can of sweetened condensed milk



1/2 cup (more or less to taste) of lemon juice (I only use fresh squeezed)



1 tsp grated rind



1/4 tsp cream of tarter



1/3 cup of sugar



1 graham cracker crust ( I recently made one using crushed nilla wafers as a crust with halves around the side. It was great and a nice change)

preheat oven 350beat egg yolks then stir in condensed milk, lemon juice and rind. mix well. pour into crust

Then in another bowl beat egg whites with cream of tarter until stiff and foamy gradually adding sugar.

Spread over pie and bake 15 minutes or until meringue is brown.

Chill about 2 hours before serving

I'm a huge fan of Lemon Ice Box Cake. Yours looks just delicious. Sometimes the older recipes are best. This is a case in point. Have a wonderful day.

That looks SO good! I haven't always loved lemon but in the last couple of years I have gained an appreciation (and a few pounds) for lemon pie.

OMG...I don't want a piece- I NEED a piece of that pie. I remember my mom making these when I was a kid (waaaaaaaaaay back, or as my girls say, "in the olden days"!!!!) It does look scrucptious!! I wish I knew how to make a diabetic lemon ice box pie. Then I really could eat some.

I think you are so right, Lemon Icebox Pie is truly more than a dessert, it's our childhoods in a round tin pan. One bite, and we're back in the kitchen with our aunts and grandothers.
